How to cook a turkey in a baking dish?

My sister and I cook our turkey that way all the time. We use the grid, essentially, what the bird does not stick to the bottom. We do not use the water in the bottom because grease from falling into the pan. Here's our method: 1. Wash and dry the turkey. Remember to rinse cavity inside! 2. Rub outside of turkey with butter or margarine. 3. Take lots of butter (or garlic cloves) and placed under the skin in the upper breast. This gives the chest a little moisture and seasonings. 4. Sprinkle with poultry seasoning (found in the spice section) around the turkey. You can use garlic, salt, pepper or other seasonings you prefer. 5. Place turkey in roasting pan. We prefer the chest up. 6. Turn the toaster 400 for about an hour, then reduce to 250 and cook overnight. In general, started our turkeys on Wednesday to 11 hours and use this method if you can eat about 1 am Thursday. We will monitor throughout the bird's morning and adjust the heat so the bird does not appear to increase over time. We do not use Aluminum Foil and we have a unit that plugs into the top the roaster with a fan. This will help the bird cook more evenly.
